The Christmas season is always going to be filled with friends, family, and a lot of rich food. If you’re going to be eating your heart out, there’s always a healthier way to go about it. We have a quick, healthy, and festive dish that is sure to impress guests at any holiday party: whole roasted cauliflower.
Have a crack at putting together this tasty roast, served with a tasty goat cheese dressing on the side. The entire recipe is incredibly simple, taking less than an hour to put together. All you have to do is simmer a whole cauliflower in the rich flavors of white wine, butter, and lemon juice, followed by a 20-minute roast. The cheese dressing employs the light goat cheese, cream cheese, and feta for a great compliment of flavors to your cauliflower.
This recipe makes 6 solid servings, perfect for an intimate Christmas dinner party.
2 1/2 cups dry white wine
8 cups of water, for boiling
1/3 cup of olive oil
1/4 cup of kosher salt
3 tablespoons of fresh lemon juice
2 tablespoons of unsalted butter
1 tablespoon of crushed red pepper flakes
1 tablespoon of white sugar
1 bay leaf
1 large head of cauliflower, leaves removed
Whipped Goat Cheese Dressing
1 cup of goat cheese or kesong puti
1/2 cup of cream cheese
1/2 cup of feta
1/3 cup heavy cream
2 tablespoons olive oil
Preheat your oven to 475°.
In a large pot, bring your wine, oil, kosher salt, lemon juice, butter, red pepper flakes, sugar, bay leaf, and the water to a boil. Add the head of cauliflower, reduce the heat, and bring the mixture to a simmer. Every now and then, turn the cauliflower around in the mixutre. Keep the heat on for 15-20 minutes, until the cauliflower is soft enough for a table knife to easily pass through.
Transfer your cauliflower to a rimmed baking sheet, and drain off all excess liquids. Roast the cauliflower head in your oven, rotating the baking sheet after 15 minutes. Cook through until brown all over, after roughly 30-40 minutes.
While your cauliflower is roasting, work on the goat cheese dressing. Blend all the cheeses, cream, and olive oil in a food processor until smooth; season liberally with salt. Transfer the whipped goat cheese mix into a serving bowl. Feel free to drizzle with olive oil to garnish. You can make the dressing a day ahead, and leave to chill in your refrigerator.
To serve, transfer your cauliflower head on an elegant serving dish. Drizzle your cauliflower with some olive oil, sprinkle with some sea salt and pepper to taste, with the whipped goat cheese dressing on the side.
